Hand brushed, hand battered, and fried at lower temperatures for longer periods of time. Someone special recently gifted me with membership ~ I don't know who, but know they are special :D! I served for the DH, DS and myself with recipe #175979 and the DM got ranch dressing and we all enjoyed our chicken, thank you alligirl, made for Everyday A Holiday tag game. Capn Crunch chicken is on the menu at LA County Fair LA - West JThis years Los Angeles County Fair will serve up a Capn Crunch chicken sandwich. Anyway my chicken breasts were large about 275g to 300g and at 45 minutes at 175C fan forced oven were perfect and moist and the crumbs nice and crunchy. The marinade made the difference in the recipe and I think more than 30 minutes would do it better justice especially if doing chicken breasts. This also keeps the food warm.Well I am giving this 5 on a number of reasons first of all I used chicken breast as the DH hates thigh meat which I would have preferred and well he his not enhanced with cereal as a crumb coating but he liked this one but please note we cannot get Cap'n Crunch Cereal here in Australia so I used Kellogs Special K which has a much lower GI factor in Australia to America (around mid range here in Australia) which I processed in the food processor to as fine as I could but even then I would say was grainy but still crumbed well. Pan Fried: heat around 2 inches of oil on medium heat. Use the meat thermometer to check the internal temperature is at 165 degrees at the thickest part. Place in single file each chicken finger and air fry for 9 minutes flipping once at 4 minutes. Also, if you cut it too thick, fry until golden brown and then place it in the oven at 300 degrees to finish it up. Air Fry: preheat the air fryer for 4 minutes at 400 degrees. Tip: The thinner you cut the strips, the faster it cooks. Chef Scott: Cap’N Crunch Chicken It’s time to use unusual ingredients and an unusual cooking method to take your usual chicken dinner to a higher level. Here’s the overall process: Dust with flour, coat with egg, roll in cereal, and fry. To make the breading, combine the breakfast cereal and panko. Pour oil into pot and put on top a burner a little less than medium heat.
